Thanks to the upcoming opening of NoButcher, Las Vegas is about to become one of only a handful of cities across the US with a vegan butcher shop.
Set to open in early fall, NoButcher, which first came on the vegan scene a few years ago, is opening Las Vegas’ first vegan butcher shop and deli.
Known for its vegan meats and cheeses, NoButcher serves up 100 percent plant-based meats and cheeses that are cholesterol-free, as well as free from hormones, preservatives and artificial flavors.
The company has garnered a following with their vegan meats and cheeses being served around town at popular vegan (and non-vegan) restaurants including Go Vegan Cafe, Cafe No Fur, Vegan Bliss (formerly Blinders Burgers & Brunch) and the 24-hour vegan-friendly bar, No Regrets.
“We started out not really knowing which direction the business would go. For the first year we sold mostly wholesale, tested and perfected our products, and got a feel for what our customers want,” says co-owner Alecia Ghilarducci. “After our vending at festivals and pop-ups we realized that we love the face-to-face interaction so we needed to open our own shop.”
Right now, the new location is being kept a secret (the owners assured us it will be centrally located), but the shop but will offer seating for about 20 guests.
The butcher shop is set to feature a deli case offering their vegan meats and cheeses, as well as housemade salads and side dishes — think specialty salads, coleslaw, potato salad, and other classic deli favorites – all veganized.
But, there’s more.
“We’ll also have a selection of signature NoButcher sandwiches and specialty sandwiches made to order available for dine-in, take-out, and drive-thru,” says Ghilarducci.
In addition to the deli case and sandwiches, a small market area featuring the owners’ favorite snacks will be included with goodies like spiced nuts, sweets, dips, and other packaged goodies.
NoButcher will be open for lunch and dinner upon opening, but the vegan butcher shop/ vegan deli intends to open for breakfast once settled in.
